Hot Cook was very excited when he saw this book arrive, preserving is one of his favourite past times and we are waiting for the Smokehouse to arrive outside the office! Covering, Drying, Salting, Smoking in excellent detail, the later chapters then focus on how to make sausages, pickling, herbs, pastes and infused oils and vinegars, fermenting, how to use sugar, in caramelised, candied and crystallised foods. This includes mouth-watering jams, marmalades and chutneys. There is also a chapter on how to use alcohol in making sloe gin, morello cherries in kirsch and other delights. Then there are practical chapters on Bottling, Canning, Air Exclusion and Freezing. There is also a Useful Addresses section. As well as the techniques there are over 100 recipes including our favourites, Righteous Raspberry Lollies, containing no dairy products or sugar, perfect for children and healthy for the rest of us. We loved the Candied Orange Peel dipped in chocolate ! We also loved the chapter on drying fruit, including fruit leather. This is a very comprehensive book written with humour and an obvious knowledge. Highly Recommended!
